Pie Guide: 3 delicious pies & how to make them

There's nothing quite like a hearty meal to get you through the winter, including a delicious homemade pie.

There are so many types of pie, but we've narrowed down 3 of our favourites recipes for you to try: Dutch apple pie, vegan pumpkin pie and chicken, leek and potato pie.


Chicken, Leek and Potato Pie

This classic pie recipe will warm your winter evening. Pair this will a fresh salad and a crisp white wine.


Ingredients

  • 2 tbsp of olive oil
  • 2 leeks, trimmed, halved, washed and sliced
  • 400g of potatoes, peeled and diced into cubes
  • 1/4 cup of plain flour
  • 1 1/2 cups of chicken liquid stock
  • 2 cups of cooked shredded chicken
  • 1 cup of grated tasty cheese
  • 1 sheet of frozen, ready-rolled puff pastry, partially thawed
  • Salt and pepper to taste


Method

  1. Preheat oven to 220 degrees Celsius
  2. Heat oil in a large saucepan over a medium heat. Add leek and potatoes and cook for 3 minutes until leeks are soft
  3. Sprinkle in flour and cook for 1 minute
  4. Remove from heat and gradually add stock
  5. Return to a medium heat and cook for 3 to 5 minutes
  6. Add chicken and cheese. Season with salt and pepper
  7. Spoon filing into a ceramic pie dish and place rolled pastry on top, pressing the edges to seal
  8. Bake for 15 to 20 minutes, until pastry is golden
  9. Stand for 5 minutes before serving



Vegan Pumpkin Pie

Try this vegan pumpkin pie recipe all year round. Pair with a classic Mulled Wine for the perfect winter dessert combination.


Ingredients

  • 2 peeled and deseeded pumpkins, cut into chunks (approximately 1.2kg prepared weight)
  • Vegetable oil
  • 350g of sweet shortcrust pastry
  • 100ml of maple syrup
  • 200g of light brown sugar
  • 1 tsp of salt
  • 1 tsp of grated fresh nutmeg
  • 3 tsp of cinnamon
  • 4 tbsp of cornflour
  • 600ml oat milk
  • 1 tbsp of icing sugar for dusting


Method

  1. Preheat the oven to 180 degrees Celsius
  2. Toss the pumpkin in vegetable oil on a baking tray and roast until soft. Set aside to cool
  3. On a lightly floured surface, roll the pastry and place in pie dish. Chill for 20 minutes
  4. Preheat the oven to 200 degrees Celsius and bake pastry base until golden
  5. Add roasted pumpkin, maple syrup, sugar, salt, nutmeg, cinnamon, cornflour and milk into a blender. Blend until smooth
  6. Pour filling through a sieve into a small pan and cook on the stovetop for 5 minutes, continuously stirring until thick
  7. Pour filling into the pie dish and return to the oven. Lower the heat to 180 degrees Celsius. Bake for 30 minutes until the filling is set
  8. Set aside to cool for 20 minutes
  9. Dust with icing sugar and serve warm



Dutch Apple Pie

Wow your friends with this super sweet pie dish. Pair it with your favourite cocktail - we recommend a Whiskey Sour with a cinnamon twist!


Ingredients

  • 1 cup of all-purpose flour
  • 1/2 of tsp salt
  • 1/3 cup and 1 tbsp of shortening
  • 2 to 3 tbsp of cold water
  • 8 cups of sliced, cored and peeled apples
  • 1/2 cup of granulated sugar
  • 1/4 cup of all-purpose flour
  • 1/4 tsp of ground cinnamon
  • 1 tbsp of lemon juice
  • 1/2 cup of softened unsalted butter
  • 1 cup of all-purpose flour
  • 2/3 cup of packed brown sugar
  • 1 tbsp of granulated sugar


Method

  1. Mix flour and salt in a medium bowl
  2. Cut in shortening and sprinkle with cold water, 1 tbsp at a time, until flour is moistened
  3. Gather pastry into a ball. On a lightly floured surface, flatten and chill for 45 minutes
  4. Preheat oven to 200 degrees Celsius
  5. On a lightly floured surface, roll out pastry and place in a pie tin
  6. In a large bowl, toss apples, sugar, flour, cinnamon and lemon juice. Pour filling into the pastry
  7. In a medium bowl, mix butter, flour and brown sugar. Sprinkle mixture over pie, followed by granulated sugar for some extra crunch
  8. Bake for 45 to 55 minutes, until the pie crust is golden and filling starts to bubble
  9. Allow to cool before serving
