Beef Bourguignon

Ingredients

  • 1kg beef chuck steak (cut into large cubes & remove any large bits of fat)
  • 150g bacon (diced)
  • 2 tablespoons olive oil
  • 1 large onion (diced)
  • 2 carrots (sliced)
  • 4 garlic cloves (minced)
  • 2 tablespoons tomato paste
  • 2 tablespoons plain flour
  • 750ml red wine
  • 500ml beef stock
  • 2 bay leaves
  • 3 sprigs of fresh thyme (or 3 teaspoons of dried thyme)
  • 250g brown mushrooms (peeled & sliced)
  • Salt and black pepper (to taste)
  • Fresh parsley (sprinkle over when serving)

Instructions

  1. Preheat your oven to 160°C. Pat the beef dry with paper towel and season generously with salt and pepper. Heat olive oil in your cast iron pot over medium-high heat, then brown the beef in batches until each piece develops a rich crust. Remove and set aside.
  2. Add the diced bacon to the pot and cook until golden. Add the onion and carrots, cooking until softened. Stir through the garlic and tomato paste, allowing the flavours to combine for a few minutes.
  3. Sprinkle the flour over the vegetables and stir well to coat. Slowly add the red wine, scraping the bottom of the pot to lift all those delicious, browned bits. Add the beef stock, bay leaves and thyme, then return the beef to the pot.
  4. Bring the mixture to a gentle simmer, cover with the lid and transfer the cast iron pot into the oven. Cook for around 3 hours, or until the beef is incredibly tender and the sauce has thickened.
  5. About 30 minutes before serving, stir in the mushrooms and continue cooking until tender. Remove the herbs, taste and adjust seasoning if needed. You can also serve your Beef Bourguignon with mashed potato, crusty bread or your favourite side dish!

A Deliciously Creamy Pumpkin Pasta Made In One Pot

Pumpkin Pasta

Ingredients

  • 1kg pumpkin (peeled and cut into small cubes)
  • 1 large brown onion (roughly chopped)
  • 3 garlic cloves (halved)
  • 2 tablespoons olive oil
  • 500ml vegetable stock
  • 200ml thickened cream
  • ½ cup grated parmesan cheese
  • 1 teaspoon dried Italian herbs
  • Salt and black pepper (to taste)
  • Fresh parsley or basil (sprinkled over when serving)
  • Your favourite pasta (cooked according to the instructions on the packet)

Instructions

  3. Reduce the heat and stir through the thickened cream, parmesan cheese and Italian herbs. Season with salt and pepper to taste, then gently simmer until the sauce reaches your preferred consistency.
  4. Cook the pasta you are using according to the instructions on the packet. Once cooked, add the pasta to the pumpkin sauce and stir until evenly coated. Serve topped with extra parmesan and fresh herbs for a deliciously creamy meal.

Create Bakery-Style Bread At Home With Your Cast Iron Pot

Did you know you can use your cast iron pot to create a delicious loaf of homemade bread that is quick and doesn't require a lot of kneading? Thanks to the excellent heat retention of cast iron, you can achieve a beautifully golden crust while keeping the inside soft and fluffy. With just a few simple ingredients and minimal preparation, this easy recipe is perfect for fresh bread straight from your oven!

Bread

Ingredients

  • 4 cups all-purpose flour
  • 2 teaspoons salt
  • 1 tablespoon olive oil
  • 1 tablespoon instant dried yeast
  • 2 cups warm water

Instructions

  1. Add the flour, salt, olive oil, instant dried yeast and warm water into a large mixing bowl. Using a stainless-steel spoon or wooden spoon, mix the ingredients together until a dough forms and there is no visible flour remaining.
  2. Cover the bowl and leave the dough to rest for 1½ hours, or until it has doubled in size. This allows the yeast to work its magic and helps create a light, airy loaf.
  3. Sprinkle a section of your clean countertop with flour, then carefully pour the dough mixture onto the bench. Coat your fingertips with flour to prevent sticking, then gently stretch and fold the sides of the dough a few times until it forms a clean, round ball.
  4. Place the dough onto a section of baking paper and cover it. Allow it to rest for another 30 minutes. While the dough is resting, place your cast iron pot into the oven and preheat it to 230°C.
  5. Using oven mitts or a tea towel, carefully remove the hot cast iron pot from the oven. Place the dough and baking paper into the pot, then put the lid back on and return it to the oven. Bake for 30 minutes with the lid on.
  6. After 30 minutes, carefully remove the lid and place the pot back into the oven for another 25 minutes. This final stage helps develop a beautifully golden and crispy crust.
  7. Once baked, carefully remove the bread from the cast iron pot and allow it to cool slightly before slicing with a bread knife. The end result will be a delicious golden and crispy loaf of bread with a soft, homemade centre that's perfect for serving with your favourite meals (or these other recipes!).

Slow-Simmered Chili Con Carne For The Ultimate Comfort Meal

Bring rich, comforting flavours to your kitchen with a delicious chili con carne made in your trusty cast iron pot! This hearty one-pot meal is packed with tender beef, aromatic spices and a rich tomato base that develops incredible depth as it slowly simmers. Cast iron cookware is perfect for this recipe, helping distribute heat evenly and lock in flavour for a satisfying meal that's easy to prepare and perfect for sharing.

Chili Con Carne

Ingredients

  • 2 tablespoons olive oil
  • 1 large brown onion (diced)
  • 3 garlic cloves (minced)
  • 1 red capsicum (diced)
  • 1kg beef mince
  • 2 tablespoons tomato paste
  • 2 cans (800g) crushed tomatoes
  • 1 can (400g) kidney beans or black beans (drained & rinsed)
  • 1 cup beef stock
  • 2 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 2 teaspoons smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon ground coriander
  • Salt and black pepper (to taste)
  • Fresh coriander, sliced chilli, sour cream or grated cheese (for serving)

Instructions

  1. Heat the olive oil in your cast iron pot over medium heat. Add the diced onion and cook until softened and translucent. Stir through the garlic and red capsicum, cooking for another few minutes until the vegetables begin to soften and the flavours develop.
  2. Add the beef mince to the pot and cook until browned, breaking it apart with a wooden spoon as it cooks. Allow the mince to develop some colour, as this helps create a richer, deeper flavour in your chili.
  3. Stir through the tomato paste, chili powder, cumin, smoked paprika, oregano and coriander. Cook for a minute or two to allow the spices to become fragrant. Add the crushed tomatoes and beef stock, then stir everything together until well combined.
  4. Reduce the heat and allow the chili to simmer uncovered for 45 minutes to 1 hour, stirring occasionally. The cast iron pot will help maintain an even temperature while the flavours blend together and the sauce thickens.
  5. Stir through the kidney beans during the final 10 minutes of cooking, allowing them to warm through without becoming too soft. Taste and adjust the seasoning if needed. Serve your chili con carne with your favourite toppings, such as fresh coriander, grated cheese, sour cream or sliced chilli.
