A Checklist Of Everything You Need To Make Bread

Before you get started, it's important to have the right bakeware essentials on hand to make the process simple and enjoyable. This section will cover everything you need to create your first delicious loaf with confidence.

Mixing Bowl

A good mixing bowl will give you the space to combine your ingredients, knead your dough and allow it to rise properly. A stainless-steel mixing bowl is a great choice because it's durable, lightweight, easy to clean and won't absorb flavours or odours.

Stand Mixer

Want a hands-off approach when baking bread at home? A stand mixer will take all the hard work out of mixing and kneading dough, helping you achieve a smooth, consistent texture with less effort. Perfect for busy bakers, a stand mixer makes the process easier, reduces hands-on time and takes the stress out of creating delicious bread at home.

Measuring Cups/Spoons

Getting your measurements right is key when baking homemade bread, as even the smallest of changes to ingredient amounts can affect the texture, rise and final result. That's why it's essential to always have a reliable set of measuring cups and spoons in your kitchen drawer, helping you create consistent, delicious bakes every time!

Dutch Oven/Casserole Pot

Did you know your versatile casserole pot (also known as a Dutch Oven) is also great for baking homemade bread? Its heavy construction and excellent heat retention help create a beautifully baked loaf with a crisp crust. It's a fantastic option if you don't have a stand mixer or bread loaf pan, giving beginner bakers an easy way to create delicious, bakery-style bread at home.

Tea Towel

A good tea towel is worth its weight in gold in the kitchen. It helps keep your kitchen tidy while also protecting your hands when handling hot trays or dishes from the oven (if you don't have oven mitts). Tea towels are also perfect for covering your dough while proofing, helping create the ideal environment for your bread to rise beautifully.

Tips For Making Perfect Homemade Bread

We've put together some top bread-making tips for beginners to help you feel confident from your very first loaf. These simple tips will help make the process easier and more enjoyable!

Kneading Vs Stretch & Fold Technique

When making bread at home, kneading and stretch and fold techniques both help develop gluten, but they work differently. Kneading is a more traditional method where all the gluten development happens at once through active mixing and working of the dough.

Stretching and folding breaks this process into smaller steps, allowing the dough to rest between folds while gradually building strength and structure.

Measurements Matter With Baking

Unlike cooking, where you often have room to adjust flavours as you go, baking requires much more precision. Exact measurements matter because small changes can affect the final result. For example, adding just half an extra teaspoon of salt can leave you with an entire loaf of bread tasting too salty.

Add Some Brown Sugar

Another great baking tip is to add a little bit of brown sugar to your bread recipe. Brown sugar helps activate the yeast when proofing, encouraging a better rise while also adding extra depth to the flavour. It can help create a softer texture and a more delicious homemade loaf with that bakery-style finish!

Temperature Matters When Proofing

Temperature plays an important role when proofing dough. Yeast needs the right temperature threshold to become active and help your dough rise properly. If it's too cold, the process will slow down, while too much heat can damage the yeast. For best results, proof your dough in a warm, draught-free spot, cover it and wait until it has doubled in size before baking.

How To Make Your First Bread Loaf With A Stand Mixer

This simple bread recipe is perfect for beginners and shows how a stand mixer can make the process easier and hassle-free!

Ingredients

  • 4 cups all purpose flour
  • 2 cups warm water
  • 1 tbsp oil (optional)
  • 1 tbsp brown sugar (optional)
  • 1 tsp salt
  • 1 tbsp instant yeast

Method

  1. Add the warm water, brown sugar and yeast to the bowl of your stand mixer. Let it sit for 5 minutes if using active dry yeast (skip this if using instant yeast). Add the flour, salt and oil.
  2. Fit the dough hook and mix on low speed for 2 minutes, then knead on medium-low speed for 6 to 8 minutes until the dough is smooth and elastic.
  3. Transfer the dough to a lightly oiled bowl, cover and let it rise in a warm place for 1½ hours or until doubled in size.
  4. Lightly grease a bread loaf tin. Shape the dough into a loaf, place it in the tin, cover, and let it rise for 30 to 45 minutes or until it has risen about 2-3 cm above the rim.
  5. While the dough is rising, preheat the oven to 220°C.
  6. Bake the loaf for 35 to 40 minutes or until golden brown and it sounds hollow when tapped on the bottom.
  7. Remove the bread from the tin immediately and let it cool completely on a wire rack before slicing.

How To Make Your First Bread Loaf With A Casserole Pot

This quick, no-knead bread recipe uses the stretch-and-fold technique to create a soft, airy bread loaf with a crisp crust. It's perfect if you don't have a stand mixer or bread pan, requiring only a mixing bowl, a casserole pot and a little patience!

Ingredients

  • 4 cups all purpose flour
  • 2 cups warm water
  • 1 tbsp oil (optional)
  • 1 tbsp brown sugar (optional)
  • 1 tsp salt
  • 1 tbsp instant yeast

Method

  1. In a large mixing bowl, combine the flour, warm water, oil, brown sugar, salt and instant yeast. Stir briefly with a stainless-steel spoon until there is no visible dry flour. Then cover the bowl with a tea towel.
  2. Leave the dough to rise for 1½ hours or until it has roughly doubled in size. Lightly flour a clean kitchen bench and tip the dough out. Perform a few stretch-and-folds, gently folding the dough over itself to build tension while using just enough flour to prevent sticking.
  3. Shape the dough into a tight ball and place it down on a sheet of baking paper. Cover and leave to proof again for 40 minutes.
  4. While the dough is proofing, preheat the oven to 230°C with the casserole pot and lid inside.
  5. Carefully remove the hot casserole pot, lower the dough into it using the baking paper, cover with the lid, and bake for 35 minutes.
  6. Remove the lid and continue baking for a further 20 minutes or until the loaf is deep golden brown. Transfer to a wire rack and cool completely before slicing.
