Justine Schofield's Chilli Con Carne
4 tbsp oil
600g diced beef (chuck, shank, etc.)
2 onions, chopped
1 red pepper, sliced
2 garlic cloves, chopped
1 tbsp cumin
1 tbsp paprika
a few crushed cumin seeds
1/2 can peeled tomatoes (200 g)
250g tinned kidney beans (drained)
salt, cayenne pepper
- Preparing the ingredients
Dice the meat, chop the onion and garlic, and slice the red pepper.
- Your stewpot will take care of everything
In the pressure cooker, add oil and gently cook the meat until golden. Stir regularly. Add the onions, red pepper, garlic, cumin, paprika, tomatoes with the liquid, and water.
Season, close, and cook for 7 minutes at a low heat. Add the drained kidney beans and leave to simmer for 15 minutes. Adjust seasoning to taste.
